If you're a geek and want more customizations then do the Server 2008. If none of the above, Windows Home Server is a good middle of the road option. s' is used with plural noun that has possession. "Michelles' car" mean there are many Michelles who have a car. If the thing that has possession does not end in "s" then just 's is used. Women's car.
s is used to make a singular noun plural. One Michelle, many Michelles. Sometimes the plural does not have an "s". 1 woman, many women.
